Here goes the recipe. and a bunch of pix. Enjoy!
Start with what I call the 3 Amigos of Oil. About 2 tablespoons of butter, Avocado oil, and Virgin Olive oil on low-medium heat. The Avocado oil keeps the butter and the olive oil from burning. Add 3 to 6 cloves of crushed garlic, add 1 package of mushrooms sliced. Cook for about 5 minutes. Optional but good. Add some white wine, cover and let simmer for 2 minutes. Take off lid. Alcohol will evaporate.
Remove mushrooms from pan. Add salt and peppered chicken breast or chicken thighs that you have pounded flat, to the pan. Actually, any meat will work! Brown and cook on both sides, then cover with lid for a few minutes.
Optional, I then removed the chicken, and added another tablespoon of the 3 amigos, butter, Avocado Oil, Olive Oil, and cooked my shrimp and added old bay seasoning. Takes about 2 minutes is all. Remove and set aside.
Put meat and shrooms back in the pan, take one-pint heavy whipping cream, raw whipping cream tastes even better if you can get it, add one tablespoon of Arrowroot powder and whisk into pan. The Arrowroot is optional too, but I like it and it is worth the carbs.
Stir for about 2 minutes while thickening and cover and let simmer for another few minutes. Add 2 cups fresh spinach or more if you like, mix in and cover for 2 more minutes.
Take out, serve and add Shrimp if you did them to the top and garnish with fresh parsley, (which helps you digest fat and garlic. Bon appetite. This is super duper easy and tastes great the next day.
